In this edition of our Customer Spotlight, we’re introducing our remarkable Paper Mart customer, Stephanie Glaisek – the brilliant mind behind Hudson Valley Chocolates.
Hailing from France and born with an innate love for chocolates and pastries, Stephanie first embarked on her culinary journey while only a teenager, becoming the first and youngest apprentice of the renowned French chocolatier, Henri Le Roux. Her expertise further flourished in Avignon, working at the esteemed Blanes patisserie-chocolaterie.
In 2000, Stephanie brought her talents to New York, gracing the kitchens of the Relais and Chateau Guide-rated Castle at Tarrytown. While working as a restaurant manager, she found joy in crafting holiday chocolates for friends and family between 2004 and 2007. This delightful hobby swiftly transformed into Hudson Valley Chocolates, a testament to Stephanie’s dedication and the sweetness she brings to the lives of her discerning customers.

A Little About Stephanie Glaisek
Tell us a little bit about yourself and your business!
I was born and raised in Quiberon, Bretagne, France. At the age of 16, I was sent to become an apprentice for a chocolatier by my parents. Later, I moved to the United States in 2000 and began my own company in 2010, where I initially sold caramels during festivals.
Over time, I expanded into wholesaling and eventually established a retail shop in 2018. The sea salt caramels, in particular, have emerged as the most popular items.
Do you have any favorite creations that you want to share with us?
I love the sea salt caramel, but my favorite ones are the salted chocolate caramel and the apple pie caramel that we sell during the fall season.

As you know, we’re celebrating 100+ years as a family-owned business, and we couldn’t have done it without your support throughout the years. What are your thoughts on the importance of shopping family-owned and local?
We also depend on local shoppers so we understand how important the community is. We have to stick together as family-owned businesses!
